Lipid peroxidation

1. Oxidation of a lipid to a lipid peroxide; lipid peroxidation can damage membrane lipids of cells and tissues, and in fatty foods, can cause rancidity. 2. The process by which lipids are oxidatively modified; so named because lipid hydroperoxides are formed in the process.
